Scrumptious Saturday - Doreen's Healthy Cookies

These are really satisfying. They definitely taste fresh and healthy...not heavy like a regular chocolate chip cookie, but they're soft and sweet and yummy!

3 large ripe Bananas (or 1 banana, 1/2 c. applesauce, and a 1/4 c. honey)

1 tsp vanilla extract

1/4 c. canola oil (or coconut oil) - I used just over 1/8 c. Doreen didn't use it at all.

2 c. rolled oats

2/3 c. almonds ground in the food processor

1/3 c. unsweetened finely shredded coconut

1/2 tsp cinnamon (I did not include)

1/2 tsp salt

1 tsp baking powder

6oz chocolate chips

Preheat the oven to 350 degrees

Combine and mix first three ingredients.

In a separate bowl wisk together the dry ingredients and then add to the wet.

Fold in chocolate. Dough will be looser than most cookie doughs. Drop spoonfuls of the dough onto a greased cookie sheet and press down lightly. Cookies do not spread.

Bake about 15 minutes
