Scrumptious Saturday - Crunchy Apple Muffins

Here's a healthy apple muffin recipe that Matt actually requested a second time! It's a keeper! I'm not posting the link because I think I changed the recipe enough to claim it as my own! But I got the original from if you're interested.

Crunchy Apple Muffins


3/4 c all-purpose flour
3/4 c whole wheat flour
1/3 c honey
2 tsp baking powder
1/4 tsp salt
1 egg
1/2 c fat free milk
2 tbsp butter melted
1 cup tart apples - peeled, cored, and chopped (I used about 1/4 c. MORE)

1/4 c oats
2 tbsp chopped almonds
1 tbsp brown sugar
1/2 tsp ground cinnamon
2 tsp fat free milk


  1. In a large bowl, combine flours, baking powder, cinnamon and salt. In another bowl, beat egg, milk, honey and butter. Stir into dry ingredients just until moistened. Fold in apples. Batter will be thick. Coat muffin cups with nonstick cooking spray or line with papers; fill 3/4 full.
  2. For topping, combine the oats, almonds, brown sugar, cinnamon and milk. Sprinkle over muffins. Bake at 350 degrees F for 20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. 
Makes about 1 dozen muffins
