Scrumptious Saturday - Blueberry Muffins
I'm not a huge fan of fruit in desserts or cakes, but I bought blueberries and Hannah was asking to help me make muffins so I did - and THESE TASTE LIKE THEY CAME FROM A BAKERY! They are so delicious, I am now smitten.
This makes 12 muffins.
double-acting baking powder
1 1/2 cups
, for sprinkling tops of muffins
Grease 12 cup muffin pan.
Preheat oven to 350.
In large bowl with mixer at medium speed, cream butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition.
Combine flour, baking powder and salt.
Add alternately to creamed mixture with milk and vanilla.
Crush 1/2 cup berries and add to batter.
Fold remaining berries into batter and spoon into muffin pan.
Sprinkle with sugar. I like to sprinkle a good bit on each muffin.
Bake 25 minutes or until toothpick inserted in center comes out clean. (I used dark pans - you might
have to adjust if you use light)
Cool in pan 5 minutes and turn onto wire rack.
