NEW RECIPE! Broccoli Chicken Muffins

It can be difficult to make bread for hot pockets all the time, so I adapted a recipe I found from and it was a success!! These are less than 150 calories per muffin...and they're very yummy - great for freezing and throwing into your lunch box to thaw the night before. The recipe makes 18 largish muffins.


2 cups whole wheat flour
1 cup white flour
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp ground pepper
1/4 tsp salt
2 eggs
1 1/3 cup buttermilk (or regular milk mixed with 1 1/3 tbsp of lemon juice or vinegar)
3 tbsp olive oil
2 tbsp melted butter
1 cup chopped cooked chicken
1 cup finely chopped cooked broccoli
1/2 cup shredded cheddar cheese


1. Preheat oven to 400 degrees. Coat muffin tins with cooking spray.

2. Combine first six ingredient in bowl.

3. In another bowl, whisk together eggs, buttermilk, oil and butter. Add chicken, broccoli and cheese.

4. Make a well in the middle of the dry ingredients. Add wet ingredients and mix until moistened. Batter will be thick. Scoop into muffin tin

5. Bake 15 minutes.

Feel free to add extra seasonings such as garlic or onion powder, rosemary, chili powder etc. I'm using these in Hannah's lunches, so I chose to leave them pretty simple.
