Monthly Menu Plan Monday

After our "We-Suddlenly-Have-To-Buy-A-Second-Car-With-Cash-In-Ten-Months July," We've been aggressively trying to refund our savings.

The good news: We managed to buy 2 decent cars in less than a year with cash.
The bad news: We need to save hard to put that money back. I want to have money for a roof next spring plus a fully funded emergency fund. I'm determined. In the same month that we purchased the car we replaced 22% of the cash spent. I'll take it!

So that said, I'm trying my hand at a MONTHLY meal plan. I'm hoping this stops trips to the store for unplanned dinner items.

I had a request for the meal plan, so here it is. We'll see how it goes.

Breakfasts and lunches will be the same for each week at a time and we'll eat leftovers for dinner one time for each meal. That doesn't phase us around here, but I know some people don't like the repetition.

Fruit is always a side to the main course (apples, bananas, clementines, grapes, etc)

  • Week 1: Individual (at-home-packaged) oatmeal with nuts and fruit
  • Week 2: Puffins (Pancake muffins) and fruit
  • Week 3: Home made granola bars
  • Week 4: Egg/Cheese/Sausage Quiche cups
  • Week 5: Home made granola/milk fruit

Lunches around here are accompanied by fruit, cucumbers, carrots etc

  • Week 1: Ham & Cheese Wraps (Matt), Strawberry/Banana smoothies for the girls
  • Week 2: All natural chicken patties (Tyson makes one that is 170 calories with no preservatives or  additives - just basic understandable ingredients)
  • Week 3: Chicken noodle soup & whole wheat biscuits
  • Week 4: Pepperoni/Cheese hot pockets (Matt), beans and rice (the girls and me)
  • Week 5: Chicken Salads (Matt and Me), Whole Wheat Banana Muffins (girls)


  • Ranch Pork Chops, potatoes, asparagus
  • Teriyaki Turkey Meatballs, rice noodles, sugar snap peas
  • Tacos, sweet corn cake
  • Orange Chicken, broccoli, rice
  • Turkey Veggie Meatloaf, cauliflower mashed potatoes, glazed carrots
  • Sloppy Joes roasted cauliflower
  • Grilled Honey Orange Ginger Salmon, Israeli Cous Cous, Green Beans
  • Breakfast for Dinner: Waffles, Spinach/Egg Omelets, Turkey Bacon
  • Bean Burgers, Sweet Potato Fries
  • Coconut Chicken, coconut pineapple dipping sauce, hawaiian rice, broccoli
  • Sauteed Shrimp, rice noodles, chopped spinach
  • Pizza for Hannah's birthday party
  • BBQ Country Pork Ribs, Baked Potatoes, Green beans
  • Italian Sausage with Peppers/Onions, homemade noodles, salad


  • baked dried apples
  • smoothies
  • pistachios, walnuts, almonds
  • crackers/cereal

I'm not quite sure how it will work, but I shaved $125 off of my grocery bill last month, I hope to take off $75 more.

Where has the time gone?

Thirteen years ago today, my main squeeze took me out on our first date...No, it wasn't to the Myan ruins....This photo was taken in Mexico City almost exactly a year later. I was 18 and he was 20 in the photo. We were on a Mission Trip with our youth group. He was a leader, I was still a student...Shhh!

At 17 and 19, we went to Chili's where I got a Ceasar salad - and they forgot to put chicken on it - but I didn't notice until later because I was so nervous. :) 

He's a super guy and I love him so much!
